We are searching for a talented and creative chef & b to join casa de sierra nevada a belmond hotel. In this dynamic role you will take charge of maintaining, organizing, and overseeing the outlets of the hotel.
this means expertly planning shifts and supplies to guarantee the smooth, efficient, and utterly operation of our entire department. You'll need to maintain clear, direct, and effective communication with all areas of the hotel to achieve our established goals. Your mission is to ensure our guest satisfaction, and to empower and develop our employees.
in your role you will be in charge of :
* develop a culinary vision aligned with the restaurant's brand and target audience.
* create innovative menus that reflect current food trends and explore new flavors, techniques, and presentation styles (when necessary).
* participate in the development of new concepts for the food and beverage area.
* understanding of traditional mexican cuisine.
* oversee all kitchen operations, including food preparation, cooking, plating, and quality control.
* establish and maintain standard operating procedures and ensure compliance with health and safety regulations.
* train, mentor, and lead chefs, cooks, and kitchen staff, fostering a positive and collaborative work environment.
* provide ongoing training and development to enhance culinary and service skills and professional growth.
* supervise the daily operations of the food and beverage department, including dining areas, bars, and the kitchen.
* monitor and optimize food costs, manage inventory, and minimize waste.
* cultivate relationships with suppliers to obtain fresh, high-quality ingredients.
* develop and implement strategic plans for the food and beverage department.
* create the food and beverage marketing and events calendar.
* actively participate in setting annual goals and kpis for each area, ensuring follow-up with each responsible party.
* conduct market research to identify trends and growth opportunities.
* recruit, hire, train, and supervise food and beverage staff.
* develop training programs to improve staff skills and service standards.
* prepare and manage the department's budget, ensuring profitability and cost control.
* monitor sales, expenses, and inventory to identify areas for improvement and cost-saving opportunities.
* foster a culture of exceptional customer service and address guest concerns promptly.
* interact regularly with guests to gather feedback and exceed their expectations.
* collaborate with the entire food and beverage team and other departments to ensure effective operation.
* coordinate with the marketing and sales teams to develop promotional strategies and drive revenue growth.
requirements
bachelor degree in hospitality management
previous experience in mexico and mexican culture
previous experience as executive chef or sous chef
proven experience of 3 to 5 years in similar position or in a f&b management role
fluently english written and conversational
previous experience in ultra luxury hospitality hotels
financial acumen
ability to work under pressure and in a fast-paced environment
flexibility to work evenings, weekends and holidays as required
strong leadership skills
